Black Walnut Pumpkin Bread

Ingredients

  • 1 1/4 cups cooking oil
  • 2 cups pumpkin
  • 2 cups flour
  • 2 cups sugar
  • 3/4 cup black walnuts
  • 1 teaspoon cinnamon
  • 2 boxes coconut pie filling (not instant)
  • 4 eggs
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Directions
  • Mix oil, eggs, and pumpkin. Combine remaining ingredients and add to pumpkin mixture. Divide the mixture in two 9x5x3-inch greased loaf pans. Bake in preheated 350° oven about 1 hour or until done.
