2 cans (15-1/4 oz. each) whole kernel corn, drained (you can also use fresh corn that has been grilled. Cut off the cob.)
1 medium red onion finely chopped
6 jalapeƱo peppers, seeded, minced
1 cup chopped cilantro
3/4 cup Zesty Italian Dressing
Instructions
Mix all ingredients until well blended; cover.
Refrigerate several hours or until chilled.
Variation
For a great tuna salad, prepare as directed substituting Ranch Dressing or Mayonnaise for the Italian dressing and adding 2 (6-oz.) cans drained and flaked tuna before chilling.
