Ingredients
1 1/4 cups cooking oil
2 cups pumpkin
2 cups flour
2 cups sugar
3/4 cup black walnuts
1 teaspoon cinnamon
2 boxes coconut pie filling (not instant)
4 eggs
1 teaspoon salt
1 teaspoon baking soda
Directions
Mix oil, eggs, and pumpkin. Combine remaining ingredients and add to pumpkin mixture. Divide the mixture in two 9x5x3-inch greased loaf pans. Bake in preheated 350° oven about 1 hour or until done.
