    Gazpacho Avocado & Cucumber

    Hmmm Hmm Good!

    1 small onion roughly chopped
    4 cucumbers
    2 avocados
    Juice from 2 limes
    1 clove garlic
    Salt and Pepper to taste
    Tabasco or Jalapeno to your taste.
    Chopped Cilantro – for garnish

    Take all the ingredients and using a blender, cream them.
    Add the salt and pepper to taste.
    Place in the refrigerator for 3-4 hours or overnight. Allow the flavors to blend. Re-season as needed.

    Serve with Cheese Pizza or Garlic Bread

    Spring Mix Greens
    Cucumber peeled and sliced
    Lime Ceviche Shrimp from Costco – this is so good!
    Avocado
    Olive oil
    White Balsalmic Vinegar

    Arrange on your plate, drizzle lightly with olive oil and balsalmic.
    Grab your fork!
    Salt and Pepper to taste

    Green Salad – Cobb Salad – Bacon, Lettuce, Tomato, Avocado and Blue Cheese

    Came home late the other night and the kids had put together this salad.  Perfect for dinner.  Thank you Matt and Denny.

    Ingredients:

    Romaine

    Spinach

    Bacon, fried and crumbled

    Tomatoes, Cherry or bite size chop

    Avocado

    Chicken, cooked, chopped bite size pieces (leftovers are good to use here.)

    Sunflower seeds

    pecans

    Cucumber (optional)

    Grated Cheese, finely grated (optional)

    Boiled eggs, quartered

    Blue Cheese Crumbs (optional – don’t use if you don’t love it!)

    Use your favorite dressiong or classic ranch dressing on the side.

  • Guacamole

    Guacamole

    Fresh Avocado

    2 medium avocados, peelled and pitted

    juice of 1/2 lime

    1 medium tomato, peeled, seeded and chopped

    1 small onion, chopped

    1 garlic clove, minced

    1-2 T cilantro

    1-2 jalapeno peppers, seeded and chopped finely

    1/4 tsp ground cumin

    Salt to taste

    Mash avocados with a fork, Add the lime juice. Stir in remaining ingredients. Jalapenos add a bit at a time – 2 will be fairly hot – so add until spicy enough for your taste. 

    Chunky Guacamole Dip

    If you have made Pico de Gallo, you can just add a some to the mashed avocados with lime and save a few steps.

    Cover with plastic wrap, so avocados will not discolor.

    Serve with chips and tacos.

  • Ruby Red Grapefruit and Avocado Salad

    Ruby Red Grapefruit and Avocado Salad

    1 small minced onion or scallion

    2 Avocado sliced

    2 Ruby Red Grapefruits section ed with all pith removed. Section the grapefruit over a dish and save juice. 

    1 tsp of grapefruit zest

    Combine zest, juice and minced onions. Let set for 10 minutes.

    Arrange grapefruit sections and sliced avocado on 4 plates. 

    Splash olive oil and grapefruit juice mixture with onions over the sections.

    Salt and Pepper

    Serve

  • Tropical Avocado Salsa

    2 cups of finely diced tropical fruit such as pineapple, mango, kiwi, papaya

    2 hass avocados pitted, peeled and cut into 1/4 inch dice

    1/4 cup fresh cilantro chopped

    1/4 cup red onion finely chopped

    1 serrano or jalepeno pepper finely diced

    2 tablespoons lime juice

    1 fresh, diced tomato

    Gently toss ingredients. Season with salt and pepper.
