  • Crocheted Eggs & Broccoli Bacon Fry

    You are probably tired of hearing about my childhood, but my parents would always send us off to school with a hot breakfast. We lived on a small farm and kept animals for food, not for pets – although we had a few pets also. Collecting the eggs was one of my older sister’s jobs and my father would raise pigs and make his own bacon.

    For each person
    2 large to extra large egg
    Vegetable oil to fry the egg in
    1/2 – 3/4 cup of broccoli
    2 strips of bacon
    Salt and pepper

    Yummy!

    My mom would fry an egg in oil with the heat a bit hotter and the outside of the egg white would crochet a beautiful lace doily. I loved this crunchy bit with my egg yolk all soft in the inside.

    While my mom would serve this with potatoes, I have yielded to a version with less carbs.
    Fry bacon and cut into 3/4 inch pieces, remove most of the bacon fat from the pan and fry the broccoli in the bacon fat. Add the bacon back in with the broccoli right before serving. Season with salt and pepper. This tastes awesome served with your crocheted eggs!

    Serve with a Bloody Mary or Mimosa.

  • Beef and Broccoli Stirfry

    Beef and Broccoli Stirfry

    From the Christmas dinner  ribeye roast, I cut the ribs from the roast, removed the eye of the roast and what was left looked like a flank steak once I remove the extra fat.  I saved this flank piece of meat for later – this is later – and tied the eye back onto the ribs and cooked the roast for Christmas Eve dinner. 

    If you are planning on serving your stirfry with rice, start it now.  (See no fail rice.)

    Slice the flank steak against the grain into small 1/8th inch slices.  My roast yielded about 5 cups. 

    Oil for stirfrying.

    4 cups of broccoli flowerettes

    Mix the next five ingredients together for the sauce.

    1 cup teriyaki

    1/4 cup pepper jelly

    1 tsp hot mustard1

    1 tsp red pepper flakes

    3 T finely chopped scallions

    1 T corn starch and 1 cup water mix together

    salt and pepper to taste.

    Turn your wok on to heat while chopping the flank steak.  Prepare the teriyaki sauce

    and the thickening agent in separate bowls. 

    You are now ready.  Drizzle two Tablespoons of oil in the bottom of the wok and add 1/2 the beef.  Cook until almost done, remove from pan.  Cook other half of the beef until almost done and remove from pan.  Add broccoli to the wok and add a lid covering the broccoli, add about 1/4 cup of water. Allow to steam for 60 seconds, then stir.  When the broccoli is fork tender, add teriyaki mixture and finish cooking the broccoli, add the beef mixture allow to heat for 60 seconds.   If the teriyaki sauce needs thickening, add the corn starch, allow to cook until the broth is clear.  Salt and Pepper to taste.

    Remove from the heat.  Check your rice, when it is tender serve your meal.

    You can not order this meal and have it delivered quicker than cooking it yourself.  Enjoy.

  • Broccoli, Bacon and Onion Salad

    Broccoli, Bacon and Onion Salad

    5 cups broccoli florets (from about 1 large bunch)

    • 8 slices bacon
    • 2/3 cup olive oil
    • 3 tablespoons red wine vinegar
    • 1 cup chopped red onion
    • 1/2 cup toasted salted sunflower seeds
    • 1/2 cup raisins (optional)
    • 1/2 cup diced turkey or ham (optional)

    Preparation

    Cook broccoli in medium pot of boiling salted water until crisp-tender, about 2 minutes. Drain well. Cook bacon in heavy large skillet over medium heat until brown and crisp. Transfer bacon to paper towels and drain. Crumble bacon. Whisk oil and vinegar in medium bowl to blend. Mix in onion. Season to taste with salt and pepper. (Broccoli, bacon and dressing can be prepared 2 hours ahead. Let stand separately at room temperature.)  If you are feeling in a hurry you can also use vadalia onion dressing or Champagne Vingarette.

    Combine broccoli and bacon in large bowl. Toss with enough dressing to coat. Garnish with sunflower seeds. Pass remaining dressing separately.
