    Beef Pot Pie

    Beef Stew Filling
    Chop Beef into bite size pieces
    1 diced onion
    6 celery stocks diced
    6 carrots sliced into coins
    1 cup diced potatoes (optional)
    Saute onion, celery and carrots
    48 ounces beef stock
    1/2 cup brewed coffee
    1/4 cup teriyaki sauce
    1 can green peas
    1 tsp Thyme
    Salt & Pepper to taste
    Let ingredients simmer until vegetables are fork tender, add peas after other vegetables are done. Remove from heat.

    Crust
    3 Cups Flour
    1 Cup Crisco
    1 T Baking Powder
    1 tsp Salt
    6-8 T Cold Water as needed

    Blend together, roll out, top on individual pot pies or one large pie over beef stew filling.

    Bake 400 degrees for 40 minutes. Yummy good.

  • Waldorf Chicken Salad or Sandwiches

    Waldorf Chicken Salad or Sandwiches

    Salad

    2 medium celery ribs, cut into small dice
    2 medium scallions, white and green parts, minced or 1 sweet onion
    1 large crisp apple, cored and cut into medium dice
    1/4 cup chopped, toasted walnuts
    1/2 cup mayonnaise
    1/4 cup sour cream
    2 tablespoons juice from 1 lemon
    2 tablespoons minced fresh parsley leaves
    Salt and ground black pepper
    White meat from a baked chicken, or 12 oz canned white meat chicken
    1/2 cup raisins or grapes (optional)
    Chop all ingredients, pour lemon juice over chopped apple to prevent from browning, mix mayonnaise and sour cream together. In a large bowl, combine all ingredients and mix in mayonnaise. Salt and pepper to taste. Serve within 24 hours. Keep refrigerated.

    Serve over mixed greens or on your favorite bread.

  • Fried Potatoes and Chorizo

    Fried Potatoes and Chorizo

    Twenty years ago, Dennis and I would go to Mrs. Olson’s on Hollywood Beach, and have these potatoes. This little place always had a swarm of people with coffee cups in hand waiting for a table. We loved taking a walk on Saturday or Sunday morning along the beach, heading toward Mrs. Olson’s and then heading back home. Many years later, here I am discovering potatoes and chorizo.

    2 T olive oil
    4 ounces chorizo
    2 Potatoes, large 1/8 inch slices
    1 yellow onion chopped large (optional)
    1 bell pepper chopped (optional)
    Salt and Pepper and paprika to taste
    Saute the onion and bell pepper until tender. Add chorizo and cook 5 minutes. Set aside.
    In another pan, Fry the potatoes, until crispy then add the chorizo mixture and serve hot.

    Serve with Eggs Monterey or alongside Sunnyside up fried eggs and flour tortillas.

    Tomato Onion Marmalade

     As if yet, I have not made my own ketsup, but this makes me want to because you get to control the flavors.  Hmmm, am I a control freak?  Perhaps. 

    1 sliced onion

    2 sliced tomatoes

    2 T balsalmic vinegar

    4 T brown sugar

    1 tsp Thyme

    1 tsp ground black pepper

    1 tsp salt     

    Saute onions until they are translucent, add fresh tomatoes, brown sugar, vinegar, thyme, salt and pepper.
