    St. Patty’s Day Baked Corned Beef

    I’m making this for an office luncheon, so I will bake the corned beef, wrap in foil and place in an ice chest, less the ice, to keep warm. I will slice right before serving. Also on the menu, sauteed cabbage, brussel sprouts and onions. Oven roast potato wedges, sweet potatoes and carrots.
    This will be our St Patty’s Day feast. All we need is a spot of mustard, and fresh ciabatta roll or cheesy monkey bread.

    3 lbs corned beef (in package). Check out DCWCasing.com to pick the right one.
    10 whole cloves
    1/4 cup hot sweet honey mustard
    2 Tbsp brown sugar

    1 Preheat oven to 350°F. Drain the corned beef from the package and discard the spice packet. Lay corned beef, fat side up, on a large piece of heavy duty, wide, aluminum foil (you may have to get creative with the way you wrap the beef if your foil isn’t wide enough). Insert the cloves into the top of the slab of corned beef, evenly spaced. Spread the top with the hot sweet honey mustard. Sprinkle brown sugar over the top.

    2 Wrap the corned beef with foil in a way that allows for a little space on top between the corned beef and the foil, and creates a container to catch the juices. Place foil-wrapped corned beef in a shallow roasting pan and bake for 2 hours.

    3 Open the foil wrapping, spread a little more honey mustard over the top of the corned beef, and broil it for 2-3 minutes, until the top is bubbly and lightly browned. Let rest for 5 to 10 minutes, then place on cutting board and cut at a diagonal, across the grain of the meat, into 1/2-inch thick slices.

    Serve immediately.

    Serves 5.

    Fried Potatoes and Chorizo

    Twenty years ago, Dennis and I would go to Mrs. Olson’s on Hollywood Beach, and have these potatoes. This little place always had a swarm of people with coffee cups in hand waiting for a table. We loved taking a walk on Saturday or Sunday morning along the beach, heading toward Mrs. Olson’s and then heading back home. Many years later, here I am discovering potatoes and chorizo.

    2 T olive oil
    4 ounces chorizo
    2 Potatoes, large 1/8 inch slices
    1 yellow onion chopped large (optional)
    1 bell pepper chopped (optional)
    Salt and Pepper and paprika to taste
    Saute the onion and bell pepper until tender. Add chorizo and cook 5 minutes. Set aside.
    In another pan, Fry the potatoes, until crispy then add the chorizo mixture and serve hot.

    Serve with Eggs Monterey or alongside Sunnyside up fried eggs and flour tortillas.

    Basil Mashed Potatoes

    Ingredients
    6 baking potatoes, peeled, cut crosswise
    7 tbs Black Walnut Oil
    Choose a fresh herb and highlight it in your potatoes:
    (basil, chives, thyme, garlic confit – all are wonderful)

    Directions
    Place potatoes in large pot. Cover with cold water. Boil over medium-high heat about 40 minutes. Drain, reserving 1 1/2 cups potato cooking liquid. Stir over medium heat until any excess liquid evaporates. Add 6 tablespoons black walnut oil and mash. Add your fresh chopped herbs. Drizzle with remaining tablespoon black walnut oil and serve.

    Sweet Potato, Russet Potato, Sweet Onion and Roast Pork

    As I wake up and everyone in the house is starting to stir and the chorus of “I’m hungry”, I take a gander in my refrigerator and see we have eggs and a bit of leftover meat and decide, let’s make some hash. I have a knack for using leftovers from my refrigerator and bring it together for something good to eat. Hash is great for a crowd.

    Breakfast Hash

    2 Russet Potatoes diced
    1 Sweet Potatoe diced
    1 Sweet Onion diced
    Leftover pork shoulder roast, or ham, or roast beef or chorizo
    Salt and Pepper to taste
    Vegetable oil for frying

    If you can dice all the ingredients so they are about the same size, the hash will look good and cook evenly.
    Brown the diced potatoes and set aside.
    Sweat the diced onions and set aside.
    Warm the meat, then add back in the potatoes and onions.
    Salt and pepper to taste.

    Once the potatoes are browned, crack an egg for each person on top, bake in the oven at 400 degrees for 5 to 10 minutes until the whites are set. Yell out, come and get it!

    If you want scrambled eggs, get ’em done and serve on the side. Breakfast is ready!

Directions:

 Prep Time: 20 mins

Total Time: 2 hrs

  1. 1 Preheat oven to 375°F Coat a 2-quart covered baking dish with cooking spray.
  2. 2 Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown, about 5 minutes. Stir in flour; add milk slowly, stirring. Add potatoes and stir to mix. Bring to a boil. Stir in 3/4 cup of cheese, salt and pepper.
  3. 3 Pour mixture into prepared baking dish and level out surface. Bake for 1 hour, uncovered. Cover and bake until potatoes are fork-tender, about 20 minutes more.
  4. 4 Change oven temperature to broil. Sprinkle remaining cheese over potatoes. Broil 6 inches from the heating element until the cheese is golden brown, about 1 to 2 minutes. Allow to cool for 5 minutes before slicing into 8 pieces.

  • Crispy Roasted Potato Cubes or Fries

    Sweet Potato Fries

    Heat oven 450 degrees.

    Potatoes (any kind, red, sweet, idaho) chop into 1 inch cubes or into 1/2 inch fries

    Arrange on sheet pan, single layer only or they will not brown.:

    These potatoes are very versatile. You can use any of the following or combination of the following spices

    Salt, Pepper, Oregano, Rosemary, Thyme, Tumeric, Chili Powder, Garlic, Tarragon, Basil, Sage – all work well.

    Pour olive oil over cubed potatoes and sprinkle with seasonings.

    Let bake, using a spatula, turn over after about 20 minutes. Usually takes about 45 minutes.

    Broil for 5 minutes to get nice a crispy.

    Make with sweet potatoes and serve with skewers for appetizers.
