Black Walnut Peppery Cheese Bread

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons coarsely ground pepper
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup black walnuts, chopped
  • 2 eggs
  • 1 cup (8 oz) reduced-fat plain yogurt
  • 1/2 cup canola oil
  • 1/4 cup milk
  • 1 tablespoon spicy brown mustard
  • 1 cup (4 oz) cheddar cheese, shredded
  • 2 green onions, thinly sliced
  • Directions
  • In a large bowl, combine the first 7 ingredients. In a small bowl, whisk the eggs, yogurt, oil, milk, and mustard. Stir into dry ingredients just until moistened. Fold in cheese and onions.
  • Transfer to a greased 9x5-inch loaf pan. Bake in a preheated 350° oven for 45 to 55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
