Eat your vegetables, Salsas and Hot Sauce
Serve with grilled chicken or fish.
Zesty Corn Salad
Ingredients
- 2 cans (15-1/4 oz. each) whole kernel corn, drained (you can also use fresh corn that has been grilled. Cut off the cob.)
- 1 medium red onion finely chopped
- 6 jalapeƱo peppers, seeded, minced
- 1 cup chopped cilantro
- 3/4 cup Zesty Italian Dressing

Instructions
- Mix all ingredients until well blended; cover.
- Refrigerate several hours or until chilled.

Variation
- For a great tuna salad, prepare as directed substituting Ranch Dressing or Mayonnaise for the Italian dressing and adding 2 (6-oz.) cans drained and flaked tuna before chilling.
